Veggie & Cheese Frittata


Did you all know I use to have a cooking blog? Well I did. I kind of miss it... so I decided that I would just start posting when I make something I truly lurrrrve :)
Tonight for dinner I decided to try a new recipe. I wanted something pretty healthy and I found this recipe for a Veggie & Cheese Frittata. It was delicious and so simple and quick to make... seriously you need to try it!
So here are the goods...

Veggie and Cheese Frittata
Serves 4 (even though Trevor ate pretty much all of it by himself.)
Prep Time: 15 minutes
Total Time: 25 minutes

3 teaspoons olive oil, divided
2 cups baby spinach
1 cup diced tomatoes
1clove garlic, minced
2 whole eggs plus 6 egg whites
3/4 cup shredded low fat cheddar cheese
salt and freshly ground black pepper
2 large tomatoes, sliced

Place oven rack about 8 inches from broiler and preheat oven to 375degreesF. Heat 1 teaspoon of oil in a large oven-safe skillet over medium. Add spinach, dices tomatoes and garlic. Saute for 4 minutes.
In a large bowl, whisk eggs and egg whites. Stir in spinach mixture and cheese; season with salt and pepper. 

(I also added some extra stuff, such as some onion flakes. Anything you think will taste good that you want to add go ahead and try...this recipe is very forgiving! I am thinking next time I make this I want to add some bacon, I think that would be yummy too.)

Heat the remaining 2 teaspoons of olive oil in the same pan. Add egg mixture, reduce heat to low, and shake pan to level ingredients. Place pan in oven; bake for 10 minutes, until eggs are just set. Turn oven to broil; place pan or rack under broiler for 2 minutes, until just browned. Remove from heat, slice into four or more pieces.

We added some garlic bread to the situation and it was yum, yum, yummy! :) ENJOY!

Nicole's friends were a blast.
I went with my good friend Taira to go see She &Him last week. We ran into my old high school friend from San Diego there! It was so nice to see her. We ended up hanging out with her and her crowd of friends, and we had a lot of fun! The music was perfection, and Zooey sounded GREAT live! It was fun music to hop around to and was a great night. I would definitely go recommend seeing them if you ever have the chance to.

Isn't she just adorable? I kind of have a girl crush on Zooey Deschanel, not going to lie.

heartstrings...

After work on Friday I came home to find this cute little box waiting for me...


and inside that box, I found this beautiful necklace... :)


I had told Trevor about this necklace I had really wanted months &months ago.
He had told me that we just couldn't afford the extra spending money, so I put it out of my mind.


As shocked as I was that he had got it for me, I think what really knocked me out of the park was that he remembered what I had even wanted.

I always say he never listens carefully &needs to pay more attention to things. I guess I can't really say that anymore, seeing that amongst hundreds of designs from the necklace designer &after me just telling him what I wanted... months later he got the exact necklace I had wanted.

It was such a sweet surprise, and made my day... and well still is making pretty dang smiley.
I was tickled.

Not sure what to title this...

I went to a funeral today. This funeral was for a friend. We weren't best friends or anything... but we sure knew each other. We knew each other enough that it really hit me... I was in total and complete shock. I met him originally through his brother, who I became really good friends with my freshman year of college. When I transferred to the University of Utah I was surprised to see him in so many of my classes. Turns out we were in the same field of study. I remember being so shocked because him and his brother looked like twins, just so much alike! It was really through school that we got to know each other. Every time I would see him we would catch up for a bit, I would ask him how is family was doing and his brother, and after two years of having classes with each other we even started to share more personal things. We became friends.
I have only ever known two people that were significantly close to me, that have died. Each were way too young to leave this world, and both died in unusual, tragic accidents. The similarities of these two deaths really shook me. What really scares me is how affected I have been by these two people who have passed. If I get like this now... what would it be like to loose a parent? a sibling? a child?

I honestly can't even imagine it. I don't want to imagine it. Just thinking about it makes me upset and cry.

Death always makes things so real. It brings you back into reality for a moment that makes you realize what is important in life. The sad thing is... time will pass, and we all will go back to worrying and stressing over things that really just don't matter. I have been so consumed lately with worrying about mynute things. Now all I can think about is my family, and how much I love them &don't want anything to happen to them. I do have comfort in my belief that families can be together forever after this life... and that does help the pain, but if anyone has lost anyone... it still hurts.

My heart goes out to the Wright family, who when I met them showed me amazing hospitality &had such genuine kindness. Who raised two amazing sons, which both have always been such stand up guys and reliable friends. Eric left this world too soon, and my only sadness is what the world will miss out on in his absence.
