Veggie & Cheese Frittata


Did you all know I use to have a cooking blog? Well I did. I kind of miss it... so I decided that I would just start posting when I make something I truly lurrrrve :)
Tonight for dinner I decided to try a new recipe. I wanted something pretty healthy and I found this recipe for a Veggie & Cheese Frittata. It was delicious and so simple and quick to make... seriously you need to try it!
So here are the goods...

Veggie and Cheese Frittata
Serves 4 (even though Trevor ate pretty much all of it by himself.)
Prep Time: 15 minutes
Total Time: 25 minutes

3 teaspoons olive oil, divided
2 cups baby spinach
1 cup diced tomatoes
1clove garlic, minced
2 whole eggs plus 6 egg whites
3/4 cup shredded low fat cheddar cheese
salt and freshly ground black pepper
2 large tomatoes, sliced

Place oven rack about 8 inches from broiler and preheat oven to 375degreesF. Heat 1 teaspoon of oil in a large oven-safe skillet over medium. Add spinach, dices tomatoes and garlic. Saute for 4 minutes.
In a large bowl, whisk eggs and egg whites. Stir in spinach mixture and cheese; season with salt and pepper. 

(I also added some extra stuff, such as some onion flakes. Anything you think will taste good that you want to add go ahead and try...this recipe is very forgiving! I am thinking next time I make this I want to add some bacon, I think that would be yummy too.)

Heat the remaining 2 teaspoons of olive oil in the same pan. Add egg mixture, reduce heat to low, and shake pan to level ingredients. Place pan in oven; bake for 10 minutes, until eggs are just set. Turn oven to broil; place pan or rack under broiler for 2 minutes, until just browned. Remove from heat, slice into four or more pieces.

We added some garlic bread to the situation and it was yum, yum, yummy! :) ENJOY!
